If you don't have compatible versions of those extensions installed, then their respective tables in the database may not upgrade correctly. This could lead to loss of data or data corruption.

Upgrading only takes a few moments and should not affect your site.

We've uninstalled the ebay extension, but tables with ebay referenced remained...
- see attached image (I assume these are for ebay extension)

Would this affect us if we decided to try the extension again at a later date?

Hi Tak, I've checked with the developer and that won't be a problem. In this case the extension will handle the upgrade if you reinstall it.
