Modify the email

Is it a way to modify the email we send to the customer : The models Act_OrderShipEmail.txt, Act_OrderRecEmail.txt and Act_PaymentRecEmail.txt
I want to edit the shipping emails to modify the content : for example the result of one is

E-mail: didier@supreme.fr
I would like to cancel the line, and cancel the email adress.

With regards to the line, i'm afraid you will not be able to take this out. With regards to the email, you could try taking out "NETQUOTEVAR:SENDER_EMAIL"
