I am late to come onto this tread but the new site looks good at a quick glance and you seem to have incorperated many of the usability/trust factors that help to increase sales.

A method that I use on shop sites that I am devloping is to run user/customer surveys. A link to your survey can be posted on your site or sent to customers when they buy something. Then you can get the views of your real users on what they do/don't like like about your shop and maybe their charateristics. It also means that you can track changes in user trends. You usually have to offer some insentive to your partisipants to take part, like a discount or something. for simple customer surveys i usually use www.surveymonkey.com as it's free for 10 or less questions and is not limited on responant numbers. This method is a very cost effective usability test method and i have found that it produces interesting results. Well worth thinking about.

The 7+/- 2 thing is a nice guide to non cluttering, but there is very little empirical evidence to back it up and much to disprove it. I think the KISS method is a better guide, always simplify as much as possible but don't loose important information.

The site looks nice, I hope that your sales increase with all your hard work. And don't forget to market it.
