If I upgrade to V7 from V5 and use V7 to make a new ecommerce site, does that make my V5 site (which I Do Not Want to upgrade) invalid?

When you upgrade you replace one site with the other.
If you want 2 sites then you need to buy V7 rather than upgrade.
