It would be of benefit to have selectable tick boxes for shipping rates so that should you not decide to ship for any reason on a particular day you could untick the next day option and it be hidden.

Sorry, I mis-understood the requirement initially. If you are referring to the individual Shipping classes being made available on the website or hidden, then this is possible (I checked in v8.5.3 and v9 as well).
Right click on any class, select Properties and you will find options to make that class appear or be hidden Offline and/or Online.
