Points to an underlying problem IMO, I can snapshot huge sites on W7 very quickly, what sort of size site we talking about? How many products etc.

Had a computer with my website on it stolen a couple of months ago (no recent snapshot, most of the images lost and 100s hours work down drain) so now I am paranoid about making copies.

Have you considered using an online backup service like Dropbox to keep a real-time backup of your site folder? Dropbox is free up to 2 GB, it's secure and very easy to use, and restoring from backup is dead easy and quite fast. It can also keep the site data synched between two PCs, eg home and office.
