Go to 'Settings | Locations' and click the '+' at the top-left hand corner of the 'Countries' grid to create a new country called 'Jersey' and another called 'Guernsey'. You will need to enter a country code for each of them, JE for 'Jersey' and GG for 'Guernsey'.
