Is it possible to restrict the use of single use coupons to certain product sections or certain products rather than to allow the use over the whole site?

Yes!
In the "Discounts, Surcharges and Coupons Settings" panel there's a tab called "cart contents" with a button on the right labelled "Product Groups". You can create product groups in there, add products to them and then select that group in the "cart contents" tab, in a drop down box a little further down labelled "product group".
