I am trialing v2014 upgrading from v10.0.4

I have noticed that 'Full Descriptions' no longer appear next to products listed in sections.

Is that correct?

But they do appear on the product page if you create a single page for a product.

Is the only way now to view the Full Description to go to a single product page?

(You used to be able to see 'full descriptions' on sections pages)

The default 2014 themes use a product summary for the Section Pages, try switching to a different layout on the layout tab for the Section pages.
