in the fragment view with the toolbar at the top i know there are various options to change the font within the fragment.

I also noticed that there is a css style option but my problem is how do you use it. At the moment everytime i click it regardless of what fragment im on it says "none" in the drop down list.

How do i use it?

Also, is there another way of putting lists within a fragment without embedding HTML as the client im building it for doesnt know html

Not really. If you want client entered HTML on the page, it has to come from somewhere.

However you could make it a bit easier on the client. See http://community.actinic.com/showthread.php?p=297678 where I show a non HTML way of generating tables. You could adapt it to create a UL list instead.
