stock control

For products which have colour options I have this as a single product with different components. But this does not appear to allow for stock control of the different colours.

Do I need to change so that each colour is a different product then set up a new dummy product with attributes, each of which is linked to the relevant coloured product?

Yes you do, look at the product options wizard, you cant stock control if the options are not real products.
