Can anyone explain to me what making a variable "selectable: false" does?

Stops you from being able to click on it on the design tab preview i suspect.

Lee's spot on. The reason for using this setting is that without it, additional HTML is generated that around these Variables allows them to be selectable within the Preview pane. This can break the what you're trying to do (especially if you use such variables inside JavaScript or PHP code).
