need a dummy SMTP?

Hi I have just moved to a fasthosts dedicated server and have migrated my actinic site from cpanel to plesk.... which wasn't too bad.
However getting the settings right has been a pain but I have managed to go through the wizard and find all the correct settings but am hanging at the email smtp part.
The reason being is that we use google apps and emails for our domain so we dont have use of the domain for smtp or as localhost and trying to use google smtp is getting us nowhere.

So is there anything we can do to get past this last stage of the wizard so we can save the correct settings and find out if we can upload the site?

Any help would be really appreciated

Set up an on domain email address and have a forwarding rule on it to your chosen service is perhaps an option?
