Customer Email - Bold Text

Hi
I can add extra text to customer emails, no problem.....but I cannot put bold html around a heading.
As the html shows up when the email is received.

Does anyone know how to bold text in the customer email?

Emails are all text based not html based so adding formatting will not work.
