How Can I Alter the T&C headings?

As ever with T&C's they need to suit each business.

I want to alter/edit/remove the catagory headings in T&C's so we can add our own, how can I do this?

I am sure there is an easy answer to this one

You can edit titles in the Design Text or via layouts in the Design Library.

Do you have to populate all the heading fields or could some be left blank?
