when is monitoring not monitoring

Since I don't actually hold stock, but print to order, I can never run out, so I don't want the website saying I have.

I do however want to be able myself to see a figure for stock, because that will tell me at a glance how many sales an item has had.

Can I assume that if I uncheck "enable stock monitoring" SD will still continue to deduct from the stock figure entered?

If you switch off stock monitoring then stock will not be monitored and thus values will never change, so if you want a back-end stock held value but not a visual one then you need to allow it to continue with Stock Monitoring enabled and then adjust your site to allow items which are out of stock (according to your backend stock values) to still be allowed to be purchased.
