Food/VAT

I'm creating a site selling food items thus there is no VAT, what is the most elegant way to configure this, so I have the option of adding non food items in the future which will need VAT adding.

the majority of clients will be trade thus I can have VAT added in checkout

I've haven't done this Jo but I would expect that you can just select the Tax Rate in the Tax Treatment section of the Product Details Tab to be Zero Rated. (So long as Advanced Tax is selected in the Business Settings Tax Tab I don't think you even need to create a new Tax Rate - I think Zero Rated is available by default)
