item not available from stock

Hi, Can anyone help me pleasse/ I have set up various combinations of colours and sizes for an item I have made one colour unavailable by unticking the valid box in the permutations tab. When I have tested it on the live site it still displays the colur and then sends me to a preset error message as follows:

[Not Used] We are sorry, the combination you selected cannot be ordered, please select again...

Two questions really. Where is the box to chnge the wording of this. I have looked under Design| text, but I cannot identify it. Can someone tell me the section that it is in. Or question 2 Is there a better way to deal with an option/style/colour etc. being unavailable

I used the search function to find 'We are sorry'

As for out of stock choices, all I do is delete them from the contents. This doesn't actually delete them but disable them. When the item comes back into stock I just undelete it.

IMPORTANT: this only works if you DONT Purge Content as this will permanently delete anything that you have marked for deletion.
