I think ive accidently deleted my New Products and Best Sellers from the Catalogue, ive tried recreating them but they just stay empty instead of updating automatically when i go into the Marketing tab etc.. How do i get them back???

Do you recall if you clicked the Generate Now button? If yes, then this would have caused the lists to clear out. To re-populate them you need to re-create the validating conditions for Actinic to pick up the products again.
For instance, if in the dialog for New Products, "Number of days product considered New" is set to 30, and the products in your DB are older than this, you would need to increase the number of days accordingly, or manually include the products in the list and lock them so that they are not over-written during the next upload.
Similarily, for the Best Sellers list, you can change the date range for Actinic to pick up the Best Selling products from the orders.
Additionally, you can also set the frequency at which this list is updated, i.e "Every 'x' days"; "Every Upload" or "Never", for both New Products and Best Sellers
