How can I change the default 'More...' in the New Product section where you make a popup?

You can either:
1/ change the text "More..." on the Extended Info tab of each product detail set.
or
2/ change the variable which inserts this text into the product template for a site-wide change. To do this go to the design view, click on the "More..." text in the preview, find both instances of "ExtendedInfoTextLink" in the Layout code and change them to the text you desire. Alternatively you could replace it with another variable which would make future site-wide changes easier if you use more than one product template. See "Adding A New Variable" in the help file for more info on this.
