Changing text field to a drop down in Checkout pages

Hi - does anyone know how I can change a text field into a drop down?
We are using one of the User Defined variables within Design/Text (GeneralPrompt000) to ask customers how they heard of the site. This is currently a text field within the Checkout section - we would like to change this so that it's a drop down giving several pre-selected options.

Any ideas gratefully received.
