Is it possible to remove the bit on checkout page 0 where it asks you to select your country? As we only ship to the UK.

Yes it is possible and if you search the forum for a post off Olderscot, you will find a method to remove the page completely. The forum is a treasure chest and you don't even need a crowbar to open it.
