How can you reseave an email confirmation that the customer has click the link to download or is there some way of tracking how many times a link is clicked?

No way of tracking, unless you use your hosting stats package like awastat to see the scripts calls in the dd folder. On the offline ordering you have the option to resend DD link as one of the option
