Tracking orders by school

Hi, what would be the best way of presenting a list of school for users to select from in the checkout process. I have a client who wants to be able to give a certain amount of profit to individual schools on each sale...(tallied up at the end of each month).

Converting one of the optional input fields to a drop down list would be best IMO.
