Which files and folders to backup

I need to set up a scheduled Windows backup of Actinic v8 for a client. Which are the critical site files and folders I need to backup? I suspect the Sites directory, but is that the only one?

Also copy and paste the encryption key in "Housekeeping", this is most important, otherwise if you lose all your data and there was orders on the site, you would not be able to decrypt them
