Where can I change the wording on the email sent to a customer to confirm receipt of their order?

Look in Design View - and select Order Received Email in the Page Type dropdown.

Design - Library - Layouts - Email Outer layout - Customer Email
or access it through any customer's order and the Mail tab - New - Manage Layouts - Edit

I also tried to modify email receipt text but I still have an issue with some part of the email that I can't modify. See below in italic:
Cher/Chère John Smith,
Nous avons bien reçu et traitons la commande suivante:
__Invoice Address and Deliver To________________________________
Email Address:
