Stock monitoring/control

I have just upgraded to v9.05 of catalogue from v8. Previously I had the amount of stock showing and it counted down as sales were made. Apparently, this must have been a variable the designer put in at the time, and this will not feature until v10. Can anyone tell me in lay woman's speak how to insert this variable so it shows up for all my products again? My brain is quite sore after the upgrade experience

Sorry to be so thick, but I am struggling to find the place to put this so that all products have the code and I don't have to do them individually.

As you are in the process of upgrading you may want to consider v10 which has just been released and has online stock management.
