Which 'instock' isn't meant to be there?

If I don't fill anything out it wont let me create the Variable.

Sorry for seeming so dumb its just you said dont fill out 'instock' and i have 4 fields with 'instock' in them. :/

Maybe just copy and paste back what i put with XXXXXX when i shouldn't have filled it in.

this is really bugging me now and im sure I am bugging you more. Sorry :/

Top Level Value is the overwright to the category then?

Select the section in the content tree and then on one of the tabs (specified when creating it), you will find your variable for filling out.

In PHP terms, you've created a variable but you've filled it out with a constant, leaving the top level value empty means it is an empty variable that you populate in the places that you want to use it, it sits there blank on all others.
