Editing variables in bold italic Blue color

Sorry, too many questions today as I have a deadline for first draft tomorrow.

there are some variables in blue bold italic font that I can't seem to edit with right click such as GeneralTitle, DeliverTitle etc.

Is there a way of modifying these ?

Can't remember off-hand but they may come from Design - Text

Thanks Duncan , I did try looking in there and made a search for both the variable name as well as their current value but they do not seem to be there.

Any more suggestions ?

Itallic ones are system ones controlled by the program or scripts as i understand.

May be in the scripts then. I did find all of these some time ago when translating a checkout to French but can't remember all the details.
