Upgrading from V8 to V11 will carry across all your data - orders, products, sections etc.
The main issues will be around; Design- custom designs may not upgrade smoothly, and the inclusion of Actinic/SellerDeck code for the new features e.g. recently viewed etc.
That said, if your site is using a default Actinic/Sellerdeck template you may find it upgrades reasonably smoothly to the new version with the old template design.

We upgrade many, many Actinic/Sellerdeck sites and see the same issues again and again e.g. CSS styling for menus being overwritten etc.
If you have a lot of design issues after upgrade you may want to look at getting some assistance in resolving them. The benefits of moving to V11 vastly outweigh any cost/time to upgrade.

You can choose to upgrade the existing site or do a separate installation. When you upgrade first publish it in test mode before you switch the live site.

Moving from catalog to business will have no impact on your site, you can just enter the new key and the business features will be enabled, it's the same software and the same data. However I think that because you are using an old version when you upgrade (check this with sales), you will have to move to V11 and this is where you may have the issues highlighted by Peblaco and Teclan.

If you are using any custom reports you will need to have those upgraded if you do have to move to V11.
