Modifying Act_CustomerEmail

I have been ransacking the advanced guide and this forum to find out how I can modify Act_CustomerEmail so that I can include the customer's title in the email sent to them when they place an order. (For marketing reasons I hijacked this variable to use for the first name of the customer to save time and effort).
Basically I want to be able to address the customer by their first name only.

A coupl eof other things... I would like to include more information into the confirmation email that I receive. Such as the Answer to "How did you find our site?" and also how they paid. In particular if it was by cheque.

I don't think you can do this in V6, but you can in V7
