We are using the Actinic Shared SSl and have enabled the CCv2 element in configure payment options, but are we meant to be able to see this information on downloaded orders? if so where.

If you have enabled it, then it should be shown quite clearly on the dialog along with the full card number.
Would suggest double checking that it is enabled in your configure method settings for the Actinic Shared SSL option and update the site and then give it another go...
Does the information for cvv2 get asked for during the checkout phase on the site?? -
