Hi,
I have a main store almost setup and designed. What I want to do is create 3-4 other stores but in catalog mode only. I know I can copy the products across with copy and paste but what about the store design and text? Can I copy that over?

You can export a snapshot from your main site and then import it into your other sites, you will then have an extract copy to start with.
