When upgrading between different versions is it possible to keep all the information on the site or would I have to start again from scratch?

Install the new v7 onto the same machine as the v6 and part of the install/recognition will be it asks if you want to upgrade the v6 site it has found.
Alternatively, create a snapshot on v6 and import into the new v7 version.
Settings, products, sections etc will all go across, but dependant on the customization of the theme or templates you are using, will depend on how much alteration you will need to do afterwards, but you have time as the v6 is not touched as part of the upgrade..
