Updating a clients site - best way?

I've been asked to update a client's site. I've asked for a copy of his existing site to work on. Obvioulsy he wants to carry on trading with his existing site in the meantime.

What's the best way of migrating the new design work to whatever changes he makes to his existing site.

Create the new design and save it as a custom theme. Then either email him the custom theme folder to install on his machine and have him select the new custom theme and apply it to the site OR when you are ready, get him to send you a snapshot, import it to your machine and apply the custom theme then send him a return snapshot to import.

Which you choose would depend on how technically literate the client is.
