Change fields in customer email

Could someone explain how to change the fields in customer's email and where I can find a complete list of fields available.

Which Customer emails templates do you wish to change, there are the online customer emails which when someone purchases an order, it gets sent. There is also the desktop email, so when you view an order, you will ship it off and use the "Mail" button to send the email.
Please could you provide a bit more information on what you wish to change.
