Overall layout is the one used for all pages unless it is overridden by a different layout defined at section level

Do you mean the 'Page Name' field? If so then that is the html name of the page that will be displayed in the browser (ie Basic_Products.html). The 'Overall Layout' field is for the template that defines the overall look of your pages (ie, logo, navigation bar, section list etc). This will usually be the same for each store page, however if you want one page to be different you can define a different template at the section level.
