This gif image appears to have additional parts to it. If you try and write say "ACTINIC" to it it will only show the wording in the theme colours

How do you edit something like this?

Hi Chris

Most of the logo are colorised, so you can change the colour within the software. Why not simply create your own logo in photoshop, paint shop pro or firework, and then hard code the image within the primary template. This way you can have greater control or where to place the image.
