Saving a theme... how?

According to the help menu in V7 I should:

1. Go to 'Advanced | Custom Themes'.

2. Click the 'Save Site As Theme' button.

3. Give the theme a name in the 'Name' field and also enter your name in the 'Author' field.

But there is no 'Save site as Theme' button - just delete, import and export.

Has it moved? Or is there a different way of saving themes now?

No - just Catalog

Just spoke with tech support - no way of saving themes in Catalog or Business.

There must be a way of getting the data out of my clients copy of the Db and then importing it into the file I'm working on. The problem I have is that the client is making daily/weekly changes to products and prices so I can't create a snapshot of what I'm working on currently as it's out of date.

How do I get the products from his site in a format I can import into mine? I can then run off a snapshot and mail it to him for him to load.
