Best Seller Theme Layout Question

Looking at using the Best Seller Theme for re-design of my site, but what I really would like to do is change the way the departments are shown in the left menu.

At the moment it has the Department Heading then underneath the names of each of the sub-sections.

What I'd like it to do is:
When you first enter the shop just have the Department Headings, when you drill down into Dog Products for the sub sections to appear under the Dog Products Heading and for the other Department Headings only to show. Then when you go into Cat Products, the sub sections appear for that department, etc etc. Hope you can understand what I mean!

Is this at all possible?
