Smart Theme Question

I'm looking at re-designing our site and changing to the Smart Theme.

What I'd like to do is have a number of Right and Left menu boxes containing information. However I can't see how to add more than the that are there at present. I've looked at Design!Options!Site Defaults and I can change the 2 that are "standard" but can't add any more.

I've seen other sites with more boxes but can't for the life of me see how to do it!
