Hi,

I would like my items accessible by sub directories as in this example http://www.novadarkroom.com/

As it is, at the moment there are just too many buttons to press once the shop is entered, and I like the idea of the listings being displayed as the cursor is held over the button.

You'll have to purchase that particular menu at Anoxy Software (search on Google) or find a similar DHTML menu free somewhere.
