Reporting Hidden Items

Is it possible to produce a report that tells me what products/sections have been hidden in my catalog ?

There is no report available as standard in Actinic that will give you this information, however you could write a user defined report (see the advanced user guide for details of how to do this) or you could print the catalog summary as this will tell you if a section is hidden but includes all of them.
