The site I am working on has keywords which require lots of characters eg +/- in them, but Actinic is determined to encode these inside the section names, product names and alt tags. So instead of having a high density for 'DVD-R', there is a high density for 'DVD& #45;R'. Is there a way to prevent this behaviour ? I would assume search engines are intelligent enough to interpret this correctly but can't find any clarification on this.

Kermy,
The search engine spiders do read HTML and will easily convert the character encoding to read the actual name. Youc an find confirmation on this here....
