? mark instead of £ sign on Linnux server

Hello. As the title suggests I am getting a problem with all site I upoad to our Linnux server.
Whenever a '£' sign is used in HTML code it comes out as a '?' sign. I have been through most of my sites and found workarounds in the most part (using the letters GBP where I can) but cannout fix it in the P&P section of the checkout.
I did read a post on this forum a few months back but it made zero sence to me, went on about unitext coding or something?????
Any ideas anyone?

Perhaps you are thinking of escaped HTML which would be £ for the pound sterling sign.

Problem is, I can't find anywhere to alter how the text in the P&P result field is set.
