Euro Symbol

I have a problem with Euro symbol. I have checked on the forum and don't find an exact solution to my problem.
On the web site the € symbol is OK, but on the mail sended to the customers the € is transformed into ?.
On the database, on currencies section I have used the €. What is the solution to get the good symbol on the email.

Thank you Bruce, I am going to check this post. I have the Actinic 5 version, but I will probably upgrade to V7 very soon. The only problem is that there is no french translation for this version !
