edit emails

how do I edit the emails that are sent out when payment is taken, orders are shipped etc.
especially the parts:

__Invoice and Deliver To________________________________________
__Customer/Recipient Details____________________________________
__Order Status__________________________________________________
__Lines Ordered_________________________________________________

in Site1 locate the txt files that have relatively self explanatory names, these contain the detail of the emails in question

ok, but...

I found the .txt files, but the pieces I want to edit are represented by NETQUOTEVARs such as:
NETQUOTEVAR:CUSTOMER_DATA
NETQUOTEVAR:ORDER_DATA
how do I edit these to change the layout?

It is not possible to change those parts of the email in Actinic because they are generated by the program.
