changing text

Is there a straight forward way to change all the text in my site without editing the code on each page individually?

That's a very broad question. As you already have an Actinic site I'm assuming you mean an easy way to update what you have for fragments and product descriptions without locating each item in Actinic. This being the case you could export your site then in Excel you can make the required changes and import again.
Export your site and take a look at the created csv fiel in Excel - you will then see the required format.
