Collect In Person

Hi, I'm quite new to this Actinic melarkey, and just trying to make some changes to our site,

We are an online store, but do have an office in preston, and we want to be able to offer a "collect in person" option on the payment options, which would hopefully create an invoice, saying they will pay when they get here.
However i dont seem to be able to find an option to do this, so far i have just modified "payment on delivery" to say "collect in person" but this is only really a quick fix to stop it from asking for card details, (it still asks for a delivery address which i dont need)

Is there a way to set up a system for the customer to invoice a customer so they can pay when they get here

any help would be great
