Image formats and sizes are dependent on the contents of the image - GIF's are best suited to low number of flat colours - complex colours / high pixel counts (such as a photograph) are best suited to JPEG formats.
In most editing software you have the option to view say 4 preview images side by side so can tinker with the format and the amounts of compression in a live preview before committing to the save.
